Its austerity reflects its modern Dutch and Danish underpinnings, as does the menu, which offers dishes like bitterballen (oxtail croquettes) and hete bliksem (hot lightning), composed of crisp fingerlings, bacon, apple and stroop syrup. Here wine is spelled wijn (focusing on varietals from Austria and Germany) and beer is bier (imported from Holland, Belgium and Scandinavia).
