Sauvage means “wild” in French, but this is a controlled, professional environment where there’s so much attention to detail that you can find six types of ice for cocktails. The same team behind Williamsburg’s Maison Premiere (Joshua Boissy, Krystof Zizka, Lisa Giffen) has expanded their repertoire at this pretty Greenpoint bistro opposite McCarren Park, going beyond oysters and seafood preparations. Here you’ll also find pot au feu and pig head confit for two—an earthy offering that could be termed sauvage. The ambitious, largely French wine list focuses on natural and biodynamic production methods.
