Behold the 21st-century Lower East Side: Sean MacPherson's swanky Ludlow Hotel and its high-profile bistro, Dirty French, run by Mario Carbone, Rich Torrisi and Jeff Zalaznick (the team behind Parm, Torrisi Italian Specialties and Carbone). Right across the street from Katz's Delicatessen, the enterprise couldn't be more different. Lighting is low, booths are snug and a young, dressy crowd swills Champagne and cocktails from delicate glassware. The menu is an amalgam of France, New York City and the world: almond-crusted clams with a berbere spice blend; brook trout meunière with sesame and dried apricots; and "steak" au poivre, a slab of soft short ribs coated with peppercorns.
