Bubby’s originally set up shop in 1990 as a pie company. And even though their menu has expanded exponentially since then—now covering everything from burgers, smoked salmon, short rib egg rolls and pit barbecued brisket to huevos rancheros and buttermilk pancakes on their late-night “midnight breakfast” menu—the spot still retains the kind of Americana charm (and signature flaky biscuits) that you’d expect in a mom-and-pop pie shop.
