Description

Bolero sounds like it would be a Spanish restaurant, but its name actually comes from a popular dance (Viet Bolero) back in 1950s Saigon. The quality of executive chef-owner Matt Le-Khac’s (ex-An Choi, Blue Hill at Stone Barns) dishes garnered him recognition from the Michelin Guide in 2021, earning a Bib Gourmand. Standouts include fried shrimp toast points with black sesame; papaya salad with roasted pumpkin seed pesto; littleneck clams and lemongrass in a fragrant beer broth; and rich, Saigon-style beef pho. The contemporary restaurant sports an open kitchen and a lovely tea garden in back.
